1. Seasoning and searing
Heat a pan over medium heat and add a little oil or butter. Season the duck with salt, pepper and herbs.
First fry the duck until it is golden brown on all sides.
Preheat the oven to 180 degrees.

Place the duck in a roasting pan and roast for 60-75 minutes, depending on the size of the duck, until the meat is cooked through and the skin is crispy. Baste the duck regularly with its own fat to keep the meat moist
