Pig's cheeks/cheeks

Pork cheeks are small pieces of meat from the jaw muscles of the pig. They contain a lot of connective tissue, which when cooked slowly turns into buttery-soft meat with a full, deep flavor.

1. Seasoning and searing
Season generously with salt, pepper, thyme and possibly a pinch of nutmeg. Let the meat come to room temperature. Heat butter in a frying pan and brown the cheeks all around for extra flavor.

2. Yarn
Deglaze with stock or red wine and simmer for 2-3 hours with the lid on the pan over low heat until the meat is tender.

3. Serving
Serve with mashed potatoes or fresh pasta, and garnish with parsley or a rich gravy.
