These sawn spareribs are expertly sawn into small pieces, ideal for use in Spanish paella, stews or as a flavouring in stocks. They are cut from the ribs of the pig and contain both meat and bone, which gives a deep, rich flavour when cooked. Because they are sawn small, they cook faster and easily release their flavour into rice dishes or soups.

1. Seasoning and searing
Season the ribs with salt, pepper, smoked paprika powder and possibly a pinch of cumin or chili powder for Spanish dishes. Brown in a pan or paella pan on high heat in olive oil. This provides a deep base for your dish.
2. Yarn
Add to paella or stew and simmer gently for 1-1.5 hours.
3. Serving
Essential in a traditional paella. Combine with seafood, vegetables and saffron rice.
