Shoulder chop is a firm and tasty piece of pork, cut from the neck and shoulder of the pig. In contrast to rib chop, this part contains more connective tissue and marbling of fat, which makes it perfect for slow cooking or stewing. The meat is marbled with fat, which ensures a juicy, full flavor. This makes shoulder chop not only suitable for frying in the pan, but also extremely suitable for slow cooking in the oven or stews.

1. Seasoning and searing
Let the meat come to room temperature. Season generously with salt, pepper, paprika powder, garlic powder or a meat spice mix to taste. Heat butter or oil in a frying pan and brown the chops on both sides on high heat for a nice crust.
2. Yarn
Reduce the heat and let the chops cook gently for 15-20 minutes with the lid on the pan at an angle, possibly with a dash of stock or gravy.
3. Serving
Pairs well with mashed potatoes or roasted vegetables. Serve with a spoonful of gravy for extra flavour.
