"Petit Poussin" is a term used for young, tender chickens that are specially selected for their soft texture and delicate flavor. These chickens are bred with care and are ideal for a refined meal. One Petit Poussin is usually served per person.
The chickens are marinated with a fresh spicy marinade with garlic and garden herbs. And are garnished with a roasted orange and a sprig of rosemary.

Marinade:77% vegetable oils (rapeseed, sunflower), vegetables (garlic, onion), salt, pepper, herbs (chives, dill, parsley, tarragon, rosemary), turmeric.

1. Seasoning and searing
Preheat oven to 180°C. Rub chicken with olive oil, salt, pepper and your favorite herbs, such as rosemary, thyme or garlic.
Heat a frying pan over medium heat and add a dash of olive oil or a knob of butter. Sear the Petit Poussin on both sides until nicely browned. Remove from the pan
2. Yarn
Place the Petit Poussin on a rack for 40-45 minutes, depending on the size, until the meat is golden brown and cooked through. Make sure the juices run clear when you pierce the meat.
