Beef tenderloin in coppa

A luxurious piece of tenderloin with fat from the Parma ham in the middle, wrapped in pancetta, garlic, fresh herbs. This combination of meat and fat melts the whole together into a particularly tasty and tender dish.

1. Seasoning and searing

No extra seasoning needed. Let it come to room temperature. Fry until golden brown all around in a hot pan with butter or oil.

2. Yarn

Pan fry the tenderloin in coppa for 1 to 3 minutes per side for a nice crust and medium-rare result. Let it rest for 5 minutes.

3. Serving

Cut into slices. Combine with truffle jus, roasted vegetables and potato gratin. Finish with fresh thyme.
