These marrow bones are sawn lengthwise and ideal for the barbecue. The marrow melts partly and gives a rich, creamy taste.

1. Seasoning and searing

Sprinkle the marrow with sea salt, garlic, lemon zest and fresh herbs such as thyme or rosemary.

2. Yarn

Grill indirectly on the BBQ for 10-15 minutes with the lid closed until the marrow bubbles. Be careful not to let it melt completely.

3. Serving

Serve straight from the grill with toast or sourdough bread and fresh parsley.
