Livar Procureur is a tender and juicy piece of meat from the neck of the Limburg pig, better known as Livar. This special pig breed is known for its high-quality meat and is kept in a sustainable and animal-friendly way in the Limburg region. The Livar pigs are fed natural food and have plenty of living space, which contributes to the rich, full flavour and fine structure of the meat.
Procureur, also called pork neck, is marbled with fine fat marbling. This ensures extra tenderness and juiciness during preparation.

Livar pork tenderloin is a very versatile cut of meat that is perfect for slow cooking, such as pulled pork, stews, or on the barbecue.
1. Preparation
Generously season the pork shoulder with a rub of your favorite spices, such as paprika, cumin, brown sugar, and garlic powder. Let the meat marinate in the refrigerator for a few hours (or overnight). Preheat the oven to 120°C
2. Yarn
Place the pork in a roasting pan and cover with aluminum foil. Let the pork roast slowly for 5-6 hours, until the meat falls apart. Pull the meat apart with two forks and serve on a bun with coleslaw and barbecue sauce.
3. Serving
Livar Procureur is ideal for both weekday meals and festive occasions. Serve it with roasted vegetables, mashed potatoes, or a fresh salad. For a complete meal, combine it with a rich barbecue sauce or a spicy mustard sauce.
