Rack of lamb is cut from the ribs of the lamb, with the bone still intact for extra flavour and an elegant presentation. This piece of meat is very tender and juicy, ideal for festive occasions. Would you prefer it without the bone? Then choose the delicious lamb fillet.

1. Seasoning and searing
Season the meat with salt, pepper and thyme. Heat a pan with a dash of oil and fry the rack on high heat until they get a golden brown crust.
2. Yarn
Cook the meat in the oven at 180°C for 15-20 minutes*.
*The cooking time is an indication and depends on the thickness of the piece of meat.
3. Serving
Let it rest and cut into individual cutlets. Serve with a red wine sauce and roasted potatoes.
