1. Seasoning and searing
Heat a pan over medium heat and add a little oil or butter. Season the quail with salt, pepper and herbs.

First fry the quail until it is golden brown on all sides.

Preheat the oven to 180 degrees.

2. Yarn
Place the quails in a roasting pan and rub them with herbs and oil. Cook the quails in the oven for 15-20 minutes, depending on the size, until the meat is cooked and the skin is crispy. You can also stuff the quails with a vegetable or herb filling for extra flavour.

3. Serving

Quail is perfect in combination with refined sauces, such as a red wine sauce or a sauce based on game stock. It also goes well with light side dishes such as roasted vegetables, mashed potatoes or a fresh salad.
