1. Seasoning and searing

Season with salt and pepper. Let the meat come to room temperature. Heat butter or oil in a hot pan and fry the meat briefly on high heat until a brown crust forms.

2. Yarn

Cook for 2-4 minutes per side, depending on desired doneness. Then let the meat rest for 3-5 minutes under foil.

3. Serving

Delicious with fried mushrooms, grilled vegetables or a creamy pepper sauce. Serve with potato croquettes or mash.
