1. Seasoning and searing
Pat dry and season lightly with pepper, salt, thyme or rosemary. Fry briefly on high heat in butter until nicely browned. Add some finely chopped onion or apple at the end.

2. Yarn
Cook for 2–3 minutes per side. Allow the inside to remain just cooked for a creamy texture. Do not overcook to prevent dryness.

3. Serving
Delicious with fried onion, apples, mashed potatoes or on toast with balsamic. Also suitable for pate or rillette.
