Chicken thighs come from the upper part of the chicken leg and are juicier and fuller in flavour than chicken fillet, with a slightly fattier texture. Ideal for stews, satay and grilled dishes.

1. Seasoning and searing
Season generously with paprika, garlic, thyme or curry. Fry in a pan with oil or grill on the BBQ. You can also marinate them first for extra flavour.

2. Yarn
Cook for 5–7 minutes per side over medium heat until golden brown. The thighs can cook a little longer without becoming dry.

3. Serving
Delicious with nasi, couscous or fries. Also suitable for pulled chicken or curries.
