1. Seasoning and searing
Season with salt, pepper, paprika or curry. Heat oil or butter in a pan and fry on medium heat on both sides until golden brown. For extra tenderness, you can marinate the fillet in oil, yoghurt or lemon before frying.
2. Yarn
Cook for 6–8 minutes per side, depending on thickness. Check that the meat is white and juicy inside. Core temperature: ± 72 °C.
3. Serving
Serve with rice, pasta, salads or on a sandwich. Combines well with creamy sauces, pesto or sweet chutneys.
