A carefully tied roulade of lean veal. Tender and juicy, with a fine flavour that comes into its own when cooked slowly.

1. Seasoning and searing
Sprinkle generously with salt, pepper, garlic powder and fresh rosemary. Sear all around in a frying pan with butter until golden brown.
2. Yarn
Continue cooking in a preheated oven at 140 °C for approximately 60–75 minutes (depending on weight). Baste in between. Core temperature: ± 55 °C for pink.
3. Serving
Let rest for 10 minutes before cutting. Serve in thin slices with gravy, seasonal vegetables and potato croquettes.
