Italian love pork tenderloin roll
This luxury roulade is made of tender pork fillet, filled with Parma ham, capers, sun-dried tomatoes, pine nuts and rocket. The oil-based marinade with green herbs provides a Mediterranean aroma.

1. Seasoning and searing
Already marinated. Remove from refrigerator and let come to room temperature. Sear all around in hot pan.
2. Yarn
Place in oven at 180°C and cook for approx. 40-50 minutes until core temperature of 70°C.
Please note! When measuring the core temperature, it is important to insert the thermometer into the meat itself, not into the filling. This prevents an inaccurate measurement, as the filling often heats up faster than the meat. This way you know for sure that the meat is cooked properly and has reached the right temperature.
3. Serving
Cut into slices and serve with pasta, tomato sauce, rocket and Parmesan cheese.
