1. Seasoning and searing
Season generously with salt, pepper, garlic, rosemary or curry. Fry briefly on high heat for a crispy crust or place directly in the oven with oil or butter.

2. Yarn
Bake in the oven at 180 °C for 35–45 minutes, until the skin is crispy and the meat is pulling away from the bone. Core temperature: 75 °C.

3. Serving
Serve with gravy, oven-baked potatoes or rice. Delicious with a fresh yoghurt sauce or garlic mayonnaise.
