Fricandeau is a lean stick meat from the ham of the pig. The meat is fine in structure, light in color and particularly suitable for slow roasting or serving cold.

1. Seasoning and searing
Season with salt, pepper, garlic and possibly mustard. Let it soak in for a while. Brown all around in a frying pan with butter.

2. Yarn
Bake in the oven at 160°C until a core temperature of 53°C is reached. Let rest for 10 minutes under foil.

3. Serving
Serve thinly sliced with gravy, on bread or as part of a cold buffet.
