1. Seasoning and searing
Season with salt and freshly ground pepper. Let the meat come to room temperature for at least 30 minutes for even cooking. Heat butter or oil in a frying pan or grill pan on high heat and fry the entrecote briefly on both sides until a nice brown crust is formed.
2. Yarn
For a pink result, fry the entrecote for about 2-3 minutes per side, depending on the thickness. Then let the meat rest for 5 minutes under aluminum foil so that the meat juices can be distributed well.
3. Serving
Serve with grilled vegetables, mashed potatoes or fries and a knob of herb butter or a red wine sauce. Garnish with fresh parsley or rosemary if desired.
