The most popular way to prepare duck breast fillet is to fry the skin side first in a pan
1. Seasoning and searing
Start by letting the duck breast fillets come to room temperature and scoring the skin well (but not the meat itself). Season the fillets with salt, pepper and possibly some herbs of your choice.
2. Yarn
Heat a pan on medium heat without oil (to render the fat from the skin) and place the duck breasts skin side down in the pan. Cook for 5-7 minutes until the skin is golden brown and crispy. Turn the fillets over and cook the other side for another 3-4 minutes for a perfect pink doneness. After cooking, let the fillets rest for 5 minutes before cutting them.
3. Serving
Duck breast fillet is perfect to combine with a rich sauce, such as an orange or berry sauce, or a game jus. The meat goes very well with side dishes such as mashed potatoes, roasted vegetables or a fresh salad.
