1. Seasoning and searing
Season with salt, pepper and coarse mustard or garlic. Brown all around in a large pan.

2. Yarn
Bake in the oven at 160°C for 60-75 minutes, depending on the size. Let it rest for 10 minutes under aluminum foil after cooking. With a core temperature between 65 and 70 degrees

3. Serving
Cut into slices and serve with gravy, mashed potatoes and seasonal vegetables.
