1. Seasoning and searing
Season with salt, pepper and possibly a little mustard. Fry in a frying pan or grill pan on medium heat until the rind is crispy.
2. Yarn
Cook for 6-8 minutes per side. If desired, briefly under the grill for extra crispiness.
3. Serving
Delicious with baked potatoes, sauerkraut or winter vegetables.
